Ratatouille is a classic Provençal dish of slowly simmered eggplant, bell peppers, tomatoes, onions and fresh herbs. This rendition combines the same traditional ingredients after they’ve cooked on the grill. Delicious cold or hot, this side dish is a perfect accompaniment to grilled fish, sausage or chicken.

The flavor is regal and the texture of this creamy appetizer is truly imperial. It's no wonder since my inspiration for the recipe came from Chef Sahd, who cooks for the Saudi royal family. His addictive Middle Eastern eggplant dip is traditionally served with warm pita bread and an assortment of salads. It's a great make-ahead hors d'oeuvre. It keeps refrigerated for several days.

Here's a healthy spin on an old-fashioned favorite, French Onion Dip. It takes a little time to simmer the onions, but the result is so worth waiting for. This tastes just like “the real thing” with a fraction of the calories and fat. Be sure to serve with baked chips.

There's no doubt that many of us are taking in too many calories from beverages. For weight loss, I recommend water as the default drink, adding slices of fresh citrus (orange, lemon, lime) to kick up the flavor AND antioxidants. Lassi (or lhassi) is an Indian yogurt drink. This sweet lassi is made with antioxidant-rich pink grapefruit juice. This frosty treat is a perfect on-the-go breakfast or a welcome refresher after a workout.

Cooking in a packet (en papillote) is surprisingly easy and doesn’t require added fat. Because the fish and seasonings are sealed in a packet, all of their juices and flavors are trapped inside. The packets can be assembled a few hours ahead of time and popped in the oven just before dinner. An equal weight of shrimp or scallops can also be used in place of the fish.

Move over cream cheese. This light and full flavored spread is great on a toasted whole grain bagel with tomato slices and capers. It can also be thinned and used as a dip. Smoked salmon has a richer color and flavor, but canned pink salmon works well too.

This is an easy way to cook a really moist turkey breast. The added bonus is that the flavorful broth can be used as a soup base for your leftover turkey—or it can be frozen to use later.

The motto at the Ranch is "eat your calories." For that reason, the focus is always on whole fruit instead of juice. But used as a cooking ingredient juice can be a great way to add fruity flavor while minimizing use of added sweeteners. This creamy frozen treat is as gorgeous as it is scrumptious.
