This souped-up version of the ultimate comfort food features fresh soy beans, known as edamame. For a vegetarian version, substitute small cubes of extra-firm tofu for the chicken and use vegetable stock. It's light, satisfying and high in protein.

I developed this recipe for a breakfast sandwich with the inspiration of one I had tasted at my favorite coffee retailer. For the same number of calories as their Reduced Fat Breakfast Sandwich, which has 350 calories, this breakfast includes the sandwich PLUS a cup of nonfat milk and a 1/2 cup of fresh blueberries. The entire meal has 350 calories, 30 grams of protein and half the day's requirement for calcium (there's also a slice of reduced fat cheese on the sandwich -- yum!).

Cooking in a packet (en papillote) is surprisingly easy and doesn’t require added fat. Because the fish and seasonings are sealed in a packet, all of their juices and flavors are trapped inside. The packets can be assembled a few hours ahead of time and popped in the oven just before dinner. An equal weight of shrimp or scallops can also be used in place of the fish.
